INGREDIENTS

FOR THE PROTEIN BROWNIE BATTER

1 cup Iron Vegan Double Chocolate Protein Powder

1/4 cup maple syrup

1/4 cup natural nut butter

1/4 cup plant-based milk or water

1-2 tsp vanilla extract

Pinch of salt


FOR THE CUPS

6 oz dark chocolate (can use vegan), chopped

1/2 tbsp coconut oil


Flakey salt for topping


TO MAKE

  1. Melt chocolate in the microwave with the coconut oil in 30 second increments, stirring until smooth and completely melted.

  2. Gather 8 cupcake liners and a cupcake tin.

  3. Pour approx 1 tablespoon of melted chocolate in the bottom of each liner, using a spoon to push up melted chocolate approx halfway up each liner.

  4. Place in the freezer for 10 minutes,

  5. Add all brownie batter ingredients to a bowl, mix until combined.

  6. Using your hands, make approx 8 balls- rolling until smooth, then push down to make a disk shape.

  7. Take your frozen chocolate out of the freezer, and drop each disk into the center of your chocolate-filled liner.

  8. Top with an additional 1-2 tablespoons of melted chocolate so that everything is covered.

  9. Place in the fridge for 30 minutes to set, or freezer for 10. Enjoy!
