Creating delicious protein pumpkin bites can be a bit challenging, especially when working with pumpkin. To help you achieve the best results, here are some essential tips:
Pumpkin – Always use 100% pure pumpkin instead of pumpkin pie filling. Make sure to measure the pumpkin after it has been well-drained to reduce moisture content. If too much moisture is retained, your bites may turn out too cakey.
Protein Powder – Choose a high-quality protein powder that complements the flavor of pumpkin. Vanilla or unflavored protein powders generally work well, enhancing the taste without overpowering it.

PROTEIN PUMPKIN BITES
Makes: 16

Ingredients
1/3 cup canned pumpkin
1/2 cup peanut butter
½ cup oat flour
¼ cup unflavoured or vanilla protein powder
1/3 cup maple syrup
1 teaspoon pumpkin pie spice see notes for substitution
1 tsp vanilla extract optional, omit if using vanilla protein powder
2 Tbsp. sugar coconut or raw sugar is fine here
1 teaspoon cinnamon
16 chocolate chips
TO MAKE
Combine pumpkin, peanut butter, oat flour, protein powder, maple syrup, pumpkin pie spice, and vanilla in a medium bowl and stir to mix together.
Scoop out approximately 16 small balls and use your hands to roll and place on a plate. (A small cookie scooper works great for scooping similar sized balls).
Cover and refrigerate balls for 15 minutes.
In a small separate bowl, mix 2 Tbsp. sugar with 1 ½ teaspoons cinnamon. Remove balls from refrigerator and roll each one in cinnamon and sugar mixture and then place back on the plate.
Use a toothpick to create partial indentations on the sides of each ball to make them look like a pumpkin.
Top each one with a chocolate chip to act as a stem and enjoy! Refrigerate leftover protein balls in an airtight container for up to 4 days.
