INGREDIENTS

  • 1 ¼ cup almond flour

  • ½ cup Iron Vegan Double Chocolate Protein Powder

  • ½ cup cacao powder

  • 1 tablespoon espresso powder

  • 1 tsp vanilla extract

  • 2 large eggs

  • ¾ cup butter melted

  • ½ cup Pyure Allulose

  • â…“ cup sugar-free chocolate chips (or any type)

  • 1 teaspoon baking powder

  • ½ teaspoon xantham gum


TO MAKE


  1. Preheat oven to 350F.

  2. Line a large cookie sheet with parchment paper.

  3. In a large mixing bowl, stir together almond flour, protein powder, cup cacao powder, baking powder, and xantham gum.

  4. In a separate mixing bowl, stir together liquid butter, espresso powder, vanilla and allulose using a hand mixer until very smooth. Crack the 2 eggs in, one at a time, constantly mixing until smooth.

  5. Pour the liquid mixture into the dry ingredients and stir until almost combined. Fold in the chocolate chips.

  6. Scoop the cookie dough evenly on the lined cookie sheet using an ice cream scoop and flatten them to about ½ inch thick using a spoon.

  7. Bake for 12-15 minutes. Let cool and enjoy!
