PROTEIN PEANUT BUTTER EGGS

These protein peanut butter eggs are a dupe for the Reese's Eggs, but are are gluten free, vegan, and high protein. They’re incredibly easy to make, are refined sugar free, require NO baking or fancy tools and are so delicious!




INGREDIENTS

1/2 cup peanut butter OR nut butter of your choice (look for a brand that only contains peanuts/nuts of choice)
1/2 cup vanilla protein powder (I used a plant-based protein)
2-3 tbsp maple syrup
1/2 cup chocolate chips
1 tsp coconut oil
Flakey salt for topping
TO MAKE
Add peanut butter to a bowl and microwave for 15 seconds.
Stir in protein powder until you get a nice fluffy texture.
Scoop out about 2 tbsp each and set on a parchment paper lined plate. Lightly form into eggs with a spoon or your fingers. Freeze for at least 2 hours. Once they are frozen, you can smooth out any bumps/form them a little better if you want.
Melt chocolate and coconut oil in the microwave in 30 second increments, stirring between each.
Dip each egg into the chocolate and set back into the freezer for 5 minutes.
Optional— use remaining chocolate for an extra chocolate drizzle if you want and top with flakey sea salt.
Once they are re-frozen, you can cut around the edges if there’s any excess chocolate to make them into perfect eggs shapes!
