A fun twist on the classic Italian almond crescent cookies, these pistachio moon cookies are easy to make and even easier to eat!

HOW PISTACHIO MOON COOKIES ARE DIFFERENT FROM ALMOND CRESCENT COOKIES


Pistachio Moon Cookies and Almond Crescent Cookies are both delightful treats, but they differ significantly in flavor, texture, and preparation.

PISTACHIO MOON COOKIES


Serves: 36

  • 2 cups all-purpose flour

  • 1 cup unsalted, shelled pistachios, finely ground in a food processor

  • 1 tsp almond extract

  • 2 tsp vanilla extract

  • ¼ tsp salt

  • ¾ cup (1½ sticks) salted butter, softened

  • ¾ cup packed light brown sugar

  • 1 egg

  • 8 oz (about 1½ cups) semisweet chocolate chips

  • 1 cup unsalted, shelled pistachios, roughly chopped



TO MAKE


  1. Heat oven to 350°F.


  2. In a bowl, stir together flour, finely ground pistachios, and salt.


  3. In another bowl, beat butter and sugar for 2 minutes, until fluffy. Beat in egg.


  4. Pour in dry mixture and beat until just combined.


  5. Shape level tablespoonfuls of dough into 2½-inch logs and bend into crescents.


  6. Place on a baking sheet 2 inches apart. Bake at 350°F for 14 to 16 minutes, until lightly browned.


  7. Remove to a wire rack to cool completely.


  8. Melt chocolate, dip crescents halfway into the chocolate, allowing excess to drip off.


  9. Sprinkle with chopped pistachios. Let dry on wire rack until set. Enjoy!
