HOW TO MAKE CLASSIC LEMON CRINKLE COOKIES

Making classic lemon crinkle cookies involves a few key steps that result in a soft, chewy texture with a delightful lemon flavor. Here’s a high-level overview of the method:


  • Preparing the Dough: In a bowl, mix together flour, sugar, baking powder, baking soda, and lemon zest. In another bowl, combine whisk together eggs, oil, lemon juice, and vanilla. Pour the wet ingredients over the dry and mix until combined- do NOT overmix!

  • Forming the Cookies: Scoop out tablespoon-sized portions of the dough and roll them into balls. Roll each ball in both granulated and powdered sugar to coat completely.

  • Baking: Preheat the oven and place the coated dough balls on a baking sheet lined with parchment paper. Bake until the edges are set and the tops are crinkled.

  • Cooling: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

CLASSIC LEMON CRINKLE COOKIES


Serves: 42

Ingredients


  • 3 cups all purpose flour

  • 1¼ cups granulated sugar

  • 1½ teaspoons baking powder

  • ¾ teaspoon baking soda

  • 1½ teaspoons lemon zest

  • 3 large eggs

  • 6 Tablespoons vegetable oil

  • 5 Tablespoons lemon juice

  • ½ teaspoon vanilla extract


  • ½ cup granulated sugar

  • ½ cup powdered sugar, sifted


TO MAKE


  1. Heat oven to 350℉ (175℃). Line 3 sheet pans with parchment paper. Set aside.


  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and lemon zest. Set aside.


  3. In a medium bowl, whisk together eggs, oil, lemon juice, and vanilla.


  4. Pour over dry ingredients. Mix together just until all ingredients are incorporated. Do not over mix!


  5. Use a 1 Tablespoon cookie scoop to portion dough.


  6. Roll into balls.


  7. Roll each ball in granulated sugar to coat. Then roll each ball in powdered sugar to coat.


  8. Place cookies 2 inches apart on prepared cookie sheets.


  9. Bake for 12 minutes, or until done.
