INGREDIENTS


CHOCOLATE CUPCAKES

2 cups all-purpose flour

1 3/4 cups sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking soda

1 teaspoon kosher salt

2 large eggs

1 cup sour cream

3/4 cup canola oil

2 teaspoons vanilla extract

1 cup strong piping hot coffee Caramel sauce filling

Chopped peanuts for topping


PEANUT BUTTER BUTTERCREAM

1/2 cup butter, room temperature

1 cup icing sugar

1/4 cup peanut butter, room temperature

1/4 teaspoon salt


DIRECTIONS


  1. Line cupcake pan with liners or spray with baking spray. Set aside.

  2. In a large bowl, sift together flour, sugar, cocoa powder, and baking soda. Whisk in the kosher salt.

  3. In a medium bowl, whisk together eggs, sour cream, canola oil and vanilla extract until it looks homogenous and creamy.

  4. Pour the wet ingredients into the dry ingredients. Stir together with a stiff spatula. The batter will be thick like frosting.

  5. Pour in the piping hot coffee. The batter will look like mud pies in a muddy lake. Keep stirring until all the liquid is incorporated and it is a homogenized cake batter.

  6. Pour the batter into the prepared pan. Place in the oven and bake for 17-20 minutes or until a toothpick poked in the center comes out clean.

  7. While your cupcakes are cooling, make your caramel sauce.

  8. Once completely cooled, poke a hole in the center of each cupcake, keeping the piece of cupcake you removed. Fill with caramel sauce, then re-top with the piece of cupcake you removed.

  9. Make your icing: In a large bowl, mix your butter, icing sugar, peanut butter and salt until light and fluffy. Place in a piping bag and pipe onto cooler, filled cupcakes.

  10. Top with chopped peanuts and enjoy!
