HOW TO MAKE SMALL BATCH APPLE CINNAMON ROLLS
Making small batch apple cinnamon rolls is a delightful way to enjoy a warm, sweet treat without the commitment of a large batch. Here’s how to create these delicious rolls in just a few easy steps.
Combine warm milk, yeast and brown sugar, and let rest for 5-10 minutes until yeast begins to foam.
Add in flour, eggs, melted butter and salt. Gently knead for 4 minutes until flour is fully incorporated. Set aside to rise for an hour.
While dough is rising, slice apples and combine with sugar, cinnamon, lemon juice, and a pinch of nutmeg. Set aside.
Combine brown sugar and cinnamon. Set aside.
When your dough is risen, roll out to a large rectangle. Spread butter across entire rectangle. Add your brown sugar cinnamon mix on top of butter. Spread softened apples on top.
Roll the dough and then cut into 6 individual rolls. Place in a greased 8x8 pan.
Bake at 350F for 22-27 minutes.
When rolls are still warm, combine icing sugar, milk, maple syrup and a pinch of salt. Mix until smooth, and ice rolls. Enjoy warm!

SMALL BATCH APPLE PIE CINNAMON ROLLS
Serves: 6

Dough
1/2 cup warm milk
1 1/4 teaspoons active dry yeast
1/2 tablespoon brown sugar
3 tablespoons salted butter, melted
2 large eggs, at room temperature
2 cups all-purpose flour
1/2 teaspoon salt
Filling
1-2 apples, peeled, cored & sliced thinly
3/4 cup brown sugar, divided
1/4 cup granulated sugar
1 tablespoon lemon juice
2 tablespoons cinnamon, divided
1/4 teaspoon nutmeg
2 tablespoons butter, softened
Frosting
1 cup powdered sugar
2 tablespoons cup maple syrup
1 tablespoon milk
Pinch of salt
TO MAKE
1. In a large bowl, combine the milk, yeast, and brown sugar. Let sit 5-10 minutes until bubbly on top. Add the butter, eggs, flour, and salt. Gently knead until the flour is completely incorporated, about 4-5 minutes. If the dough is still sticky, add an additional 1/4 cup flour, adding more as needed until the dough is smooth to the touch.
2. Cover the bowl with plastic wrap and let sit at room temperature for 1 hour or until doubled in size.
3. Meanwhile, make the apple pie filling. Combine apples, 1/4 brown sugar, 1/4 cup granulated sugar, lemon juice, 1 tablespoon cinnamon and nutmeg. Mix and set aside. In another small bowl, mix 1/2 cup brown sugar and remaining cinnamon together. Set aside.
4. When the dough is doubled in size, punch the dough down and roll out onto a lightly floured surface, creating a large rectangle about 6 x 9 inches. Spread the softened butter and brown sugar cinnamon mixture evenly over the dough. Spread the apples on top of the sugar. Then starting with the long edge closest to you, roll the dough into a log, keeping it tight as you go. When you reach the edge, pinch along the edges to seal. Using a sharp knife, cut into 6-8 rolls. Place the rolls into the prepared baking dish. Cover while the oven preheats.
5. Preheat the oven to 350° F. Bake the rolls for 22 to 27 minutes or until golden brown.
6. Meanwhile, make the icing. In a bowl, whisk in the powdered sugar, milk maple syrup and a pinch of salt. Spread the icing over the warm rolls. Serve and enjoy!
